I’ve had this post in a draft for months now. This summer (the one that we’re just getting over), per usual, there was an overabundance of zucchini. While I love a good stir fry, I eventually get tired of eating it day after day, so I learned how to make zucchini bread. It’s not that hard to make and it is actually really good. I say that because I wouldn’t have thought that a bread made with a vegetable would taste good, but it’s awesome. It was also a crowd pleaser at my Summer Bible Study.
To get the recipe that I (for the most part) followed, click here. Just some notes, I substituted the 1/4 teaspoon of baking powder for about 1/8 teaspoon of CREAM OF TARTAR and added an extra pinch of baking soda to eliminate the corn starch from the baking powder. It all turned out fine. I also made sure I had a vanilla that did not contain corn syrup. You have to watch your vanilla extracts closely if you’re on a corn-free diet.
I had some really big zucchinis, so one was more than enough for this bread.
I like to grate the zucchini using the grate attachment on my food processor. It just works faster.

You have to beat those eggs. Beat them like a rented mule.
While beating the eggs, you also add sugar and oil.
Put your dry ingredients in with the egg mixture and stir in your zucchini and walnuts and you’re good to go for the pan.

I like to listen to music a lot and often use it for my various moods and activities. I find not too many things more enjoyable than cooking while listening to some good music. It’s fun to jam and whisk all at the same time. So, for those times when I listen to music and cook, I’ll tell you about what I was listening to while I was cooking that particular recipe. That way, you can have the full experience too!
While I made the zucchini bread, I listened to Brandi Carlile. She’s been around for a while and I’ve known that she’s existed, but it’s only been recently that I’ve given her a good listen. She’s got some great pipes, some good songwriting behind her and you can sense her passion. I’m a sucker for the passionate singing. I’m almost at first name status with her, haha. I really love that live album with the symphony that she did. Have you heard some of the new songs she’s been playing live? I’m really excited for them because she’s moving to a bit of a more country sound which is where she really seems to shine. Anyway, I miss you too and if you ever want to come visit, you can always stay here! π

I’ve only heard one or two of the live ones. Her style definitely has some country tendencies. Her voice is so unique…good stuff. I might have to cash in on that offer sometime! π
